Canadian Meat Pie Recipe (Recette Tourtière du Canada)

500 g beef, cut into small cubes

500 g pork, cut into small cubes

500 g chicken, cut into small cubes

250 g chopped bacon

1 cup chopped onion

2 cups cubed potatoes

2 cups beef broth

1/2 cup red wine

3 cloves finely chopped garlic

1 Bouquet Garni or 2 teaspoons Herbes de Provence

Puff Pastry 1 commercial butter

2 tablespoons fresh salted butter

1 egg yolk, beaten with 1 tablespoon water

Stir well and brown in chunks in a skillet in butter. Place in

2 small roasting pans.
In the same pan, sauté the onions, garlic, and bacon with the remaining butter. Deglaze with red wine.

Remove the onion with the prepared lumps and stir. Sip soup and add Bouquet Garni

Cover and bake 3 hours at 300°F.

Remove from oven. Add the drained potatoes and mix. Put the dough on top and cut a notch in the middle. Brush the egg yolk with flour.
